Savart La Moufle, Champagne Savart 2020

The 2020 Extra-Brut La Moufle, 100% Meunier from a parcel on chalk, is just as impressive as it was last year. Veins of saline minerality cut through a core of Meunier fruit in this tense, nervy Champagne. All the elements are so well balanced. Dried pear, ginger, spice, menthol, sage and dried flowers all race across the palate. This really opens beautifully with air. There's dazzling purity on display here. Most Meunier in Champagne is planted on sand, but this is a rare example from a parcel on chalk, where there’s also about 4-5% Chardonnay co-planted. Dosage is 1.5 grams per liter.
